Dad's Fajita Recipe

Dad's Fajita Recipe (Serves 4-6)
Obviously you may substitute anything you prefer but this is my standard recipe.
Ingredients
1 md-lg onion sliced
2 md green bell peppers sliced
1 md red bell pepper sliced
2 garlic cloves or 1 TB minced garlic
1 TB cumin
1 TB oregano
1 tb garlic powder
1 tb onion powder
1 can diced tomatoes (fire roasted or regular) or 4 Roma tomatoes
1 cup rice (white or mexican)
1 can pinto beans or refried beans
2 cups water
1 lb pork chorizo
1 lb ground beef or steak
1 lb chicken (breast, tenderloin, or even canned) sliced into chunks
taco or Mexican style cheese grated or pre-made
12-14 flour tortillas
salt and pepper to taste
hot sauce to taste
canola oil
Process
Begin with adding both chorizo and beef into pan over medium heat, allow to brown and drain any juices. set aside.
In another pot, add 1 cup rice and 2 cups water, turn heat to low, cover and let cook for 20 minutes.
In another pan, heat oil and over medium heat saute garlic, onion, and peppers for about 8 minutes. Add all spices cumin, oregano, onion and salt and pepper to mix, allow veggies to cook to a crisp, do not over cook. In last 4 minutes add diced tomatoes to veggie pan.
Turn heat back on over meat pan to low-med and add chicken and pinto beans, cook for additional 8 minutes. In last few minutes add veggie pan ingredients to meat pan and mix.
Add kosher salt and pepper if needed to taste.
Add hot sauce and cheese if desired.
Microwave tortillas for 15 seconds each or put in 250' over 6 minutes wrapped in aluminum foil. You want the tortilla soft not crunchy.
Add a couple a spoonfuls of mixture to tortillas, fold corners first and roll.

This sounds like a great recipe! I like the ingredients as well as the spices so I will definitely try this. It also seem like a recipe where you can replace one or two of the ingredients with what the refrigerator has to offer for the day. These types of recipes are so useful and practical! You got it thoughtforce, sometimes I find myself having to compromise since I may be out of something or my son refuses to eat it if the tomatoes stand out so alter it however you need to I'm sure it would still taste great. Thanks for reading and your input
